Ingredients: Thinly sliced smoked ham, 2 slices per serving. 8 eggs. 3/4 cup grated sharp Vt.cheddar. Coarse grind Pepper Cooking spray Instructions: Preheat oven to 400. Have rack just below centerof oven. Lightly spray 8 large sized muffin tins with cooking spray. Line with 2 slices thin smoked ham, leaving overflow over muffin cup. Place grated cheddar over ham in bottom of each cup, then break an egg over the cheese (be sure to break the yolk, too.) Fold back the ham and tuck back into sides of cup so that it won't burn when cooking. Sprinkle lightly with coarse pepper and Bake for 12-15 minutes until done. Let set for just a few minutes before scooping each ham basket onto a warm plate. Serve with thick whole grain toast standing between them. Serve with a smile, my guests just love them! |
