Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
6 large crescent croissants, split in half, lengthwise
4 eggs
1/2 cup milk (low-fat works fine)
1/2 cup chunky style orange marmalade
1/2 cup real maple syrup (we use Fancy grade)



Instructions:
Combine 1/2 cup orange marmalade with 1/2 maple syrup. Heat in the microwave for 2 minutes on high. (This special syrup can be made ahead and refrigerated as it keeps well and gets better each day - be sure to heat it before drizzling on croissants)

Split croissants lengthwise and dip into egg/milk mixture. Let set insides up while you preheat your griddle to 350 degrees F, lightly swipe with butter and cook the croissants on both sides like French Toast, but watch carefully - they brown and cook quickly because they are airy. (Do not flatten)

Serve in a spiral of 3 on a warmed plate with a meat of your choice. Drizzle lightly with hot orange syrup (recipe above). Just before serving, squirt a rosette of whipped cream on the top and dust cream rosette with nutmeg.
