Cinnamon Mornings and Chocolate Dreams

Cook Time: 10 minPrep Time: 5 min
Yield: 1 servings 

Ingredients:
2 large eggs
2 Tablespoons milk
2 Tablespoons flour
butter

Optional: raspberry jam, apple compote, cinnamon, powdered or regular sugar

Instructions:
*Heat a cast iron pan over medium heat & melt several Tablespoons of butter till almost browned.
*Whisk the eggs with the milk in a medium bowl. Add the flour gradually & whisk well for a smooth batter.
*Pour batter into the hot, buttered pan & as the pancake begins to set, run a spatula around the edges to loosen, & tilt the pan so excess batter runs underneath.
*Add several more Tablespoons of butter under the pancake, & shake the pan to keep it from sticking.
*Continue to tilt the pan, expanding the size of the pancake. Shake & cook till browned.
*When the sides start to curl, flip the pancake over & brown slightly.
*Serve with raspberry jam; topped with apple compote & dusted with cinnamon & powdered sugar; or simply sprinkle table sugar on top.

Notes:
Great Grandma's secret: lots of butter!

During World War II our family in New York would roll the flour into a newspaper & send it to the family still in Northern Germany, as they were unable to get flour but had eggs, milk & butter at the homestead.
