Ingredients: 3 cups flour 4 tsp baking powder 3/4 cup sugar 1/4 tsp salt 1 egg 1 ¼ cups orange juice 2/3 cup oil(canola or safflower) 3/4 cup toasted wheat germ 3/4 cup chopped nuts 3/4 cup dried cranberries 2 tsp grated orange peel (optional) Instructions: Sift together flour, baking powder, sugar, and salt. Combine egg, orange juice, orange peel, and oil. Add liquid ingredients to dry and mix gently. Fold in nuts, wheat germ, and dried cranberries. For bread: pour into greased pan. Bake at 350 degrees F for 50-55 minutes. Cool in pan 10 minutes then remove onto wire rack. For muffins: line muffin cups or grease well. Bake at 400 degrees F for 15 minutes. |
