Ingredients: Italian arborio rice 350 gr,one whole radicchio (better if trevignano) ,2 spoon of extra virgin olive oil , 200gr of gorgonzola cheese ,parmesan cheese ,one onion ,salt and pepper Instructions: You put in a pan the oil ,the radicchio cuted in little strings ,one chopped onion salt and pepper ,you may put litlle water when the heat start to brown the onion . After 10 minute you put the arborio rice and cover the rice with vegetable broth .when the broth starts to finish to put again and you always move with a wood spoon the rice . when you see the rice cooked you put the gorgonzola cheese and some parmesan cheese grated . You serve the risotto with some fresh radicchio on the top ... Notes: The nice combinance of bitter radicchio with the sweet gorgonzola is extraordinary !!! |
