Ingredients: 4 lb Italian sausage; at least 1 lb should be hot 1 large can (46 oz) tomato juice 1 large can tomato puree 2 large cans diced tomatoes 1 large can tomato paste 1 green bell pepper, diced 1 large onion, diced 2 tbsp basil 2 tbsp oregano 1 tbsp garlic salt 1/2 c. grated or shredded parmesan salt to taste Instructions: Remove casings from sausages and brown in large kettle, stirring to form sausage "lumps". Remove excess fat. Add onion and saute until limp. Add the rest of the ingredients. Simmer over low heat 3 1/2 hours, stirring frequently. Can be frozen for later use. Notes: You can titrate the ratio of hot/sweet or mild Italian sausage to suite your guests' tastes for spicy. However, even sensitive palates appreciate the flavor enhancement produced by some hot sausage. |
