Cinnamon Mornings and Chocolate Dreams

Ingredients: 2 cups fruit (a mixture of sliced peaches, cantalope balls, honeydew balls, blackberries) 1 cup fruit juice (defrosted frozen fruit or orange or peach juice) 1 teaspoon ground cinnamon 1/2 teaspoon ground coriander 1/2 teaspoon ground allspice 1 tablespoon pure vanilla 1 tablespoon peach schnapps Topping 1 cup old fashioned oats 1/2 cup brown sugar 1/4 cup butter or margarine 2 tablespoon flour Instructions: Preheat oven to 350F. Place fruit in clear oven-proof dish sprayed with vegetable spray - set aside. In a separate bowl, cominbe the cinnamon, coriander, allspice, vanilla and schnapps. Stir well until blended. Pour over fruit. For the topping, cut sugar, butter and flour into oats with a fork in a separate bowl. Press this mixture firmly into center of fruit with back of spoon. (leave about 1" around sides uncovered) Bake uncovered at 350 degrees for 30-40 minutes or until center is set and fruit along sides bubbles over. |
