Ingredients: 1/2 cup Sugar 1 cup of Low-fat Milk or Half n' Half 3 Eggs 1 tsp Vanilla extract 1 tsp Almond extract 1/3 cup Flour 1/3 cup Almonds, ground 2-4 Pears, core, peel, and evenly sliced lengthwise about 8-12 slices per pear. 1/2 cup cherries, pitted and halved Instructions: 1. In a blender combine all ingredients, except the pears and cherries. Blend very well, scraping the sides of the blender a few times to get all the flour mixed in. 2. Prepare the pears and arrange on the bottom of the greased pan in a pinwheel fashion, with the base of the pear sections toward the outer edge. Add the cherries in the center 3. Slowly pour the egg batter into the pie pan – the pears will float so nudge them about to keep their pinwheel formation. 4. Bake in the oven until set, puffy and golden about 45-60 minutes. Cut into 6 slices. Notes: Clafoutis (claw-foo-tea) are a traditional country French dessert, best described as a cross between a cake and flan. With the addition of ground almonds, I reduced the amount of flour. If you wish for more a cake texture, add 1/3 cup more flour. |
