Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
400g (1 lb approx)whitebait
1 egg
1/2 tsp finely grated lemon rind
Squeeze of lemon juice
1 tbsp flour
Sea salt and ground black pepper
Butter for cooking

Instructions:
Combine the whitebait, egg, lemon rind, lemon juice and flour and season with salt and pepper. Melt a knob of butter evenly over the base of pan. When the butter is sizzling, drop small spoonfuls of the mixture into the pan. Cook for 1-2 minutes on each side, or until golden brown. Serve warm. Makes about 20 small fritters.

Notes:
Also taste great cooked on the barbecue.
