Cinnamon Mornings and Chocolate Dreams

Ingredients:
For each frittata:
1 fresh egg
1/8 c chopped spinach
1 tsp water
3 Tbls canned crushed tomatoes
1/3 c diced cooked potatoes
dash garlic powder
dash herb seasoning
dash oregano 1/4 c shredded Vermont cheddar

Instructions:
Combine egg, potatotes, spinach, water, herb seasoning, garlic powder; pour into a preheated and oiled skillet (use 6-in skillet for one or two fritattas, 8-in. for three, or 12-in. for four). Cook until mixture is slightly set, then transfer pan to broiler. Broil until top is just brown, then top with tomatoes, cheese, and oregano. Broil until cheese melts.
