Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
3 large eggs
3/4 cup milk
3/4 cup white flour
1/2 tsp. salt
1/2 tart apple, peeled, cored & sliced
1 1/2 tbs. unsalted butter

Filling
1/4 cup unsalted butter
1/4 cup sugar
2 & 1/2 apples, peeled, cored & sliced
cinnamon & nutmeg to taste

Instructions:
Preheat oven to 450 degrees F. Beat eggs, milk, flour and salt in medium sized bowl until very smooth. Fold in 1/2 sliced apple.

Melt 1 1/2 tbs. butter in 10" ovenproof skillet. When butter is very hot, swirl around in skillet and add batter. Put the skillet in hot oven and bake 15 minutes. Lower temperature to 350 degrees F and bake for additional 10 minutes.

While pancake bakes, prepare the filling.

Melt butter, add sugar, rest of sliced apples, butter, cinnamon and nutmeg to taste in a small saucepan or skillet. Saute apples until tender, but not soft.

When pancake is light brown and crisp, pour the filling on one side and fold the other side over it, omlet style. Serve with butter, maple syrup, preserves or butter. Or serve openfaced, with filling over all. Garnish with strawberries or other fruit.
