Ingredients: 1/2 stick butter ; melted
5 eggs
1 cups cottage cheese
1/2 pound pepper jack cheese ; chopped in cuisinart or grated
1/4 cup AP flour
1/2 teaspoon baking powder
4 ounces mild green chilies ; (canned work very well, although you have to watch for stems)
Instructions: Melt the butter mix with cottage cheese. Mix cheese and flour and baking powder in food processor and chop until fine. Add the remaining ingredients. Flour pans lightly and pour mixed batter into pans evenly. Garnish with parsley or slices of green onion. Bake for 30-35 minutes at 350 F It should be just set and browned on top.
I find that Cabot Farms (of Vermont) makes _the_ best pepper jack cheese. It's too mild with Tillamook or other brands.
