Ingredients: 1 very small Vidalia onion, diced 2 Tbsp butter 5 eggs 1 C grated Cheddar Cheese 6 oz Cottage Cheese ¾ lb Zucchini, chopped 1 tsp basil 1.5 lb Ricotta Cheese 1/3 C Bisquick dash salt and pepper Instructions: Preheat oven to 350 degrees. In a skillet, saute the onion (until transparent) and zucchini in the butter. Add the salt, pepper and basil. Remove from heat and in a large mixing bowl, add the remaining ingredients to the zucchini and onion, mixing well. Pour the mixture into a well greased (or Pam sprayed) 1 ½ quart baking dish and bake for 50 mins or until light golden color. Notes: An interesting variation on the traditional quiche and a great way to use all of those zucchini in your garden! |
