Ingredients:
1/2 cup pecans, toasted and coarsely chopped
2 cups grated raw carrots
1 large apple,peeled and grated
2 cups flour
1 1/4 cups white sugar
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cinnamon
1 cup coconut
3 eggs
2/4 canola oil
1 1/2 teaspoons vanilla


Instructions:
Preheat oven to 350. Grease muffin tin. Toast pecans,chop coarsely. Peel and grate carrots and apple. In large bowl, whisk together flour, sugar, baking soda, baking powder, salt, and cinnamon. Stir in nuts and coconut. In separate bowl, whisk together eggs, oil, and vanilla. Fold wet ingredients into dry. Add apple and carrot, stirring just until moistened. Fill muffin tin. Bake 20 -25 minutes.
