Ingredients: 2/3 cup whole oats (soak oats in buttermilk while preparing)
1 1/2 cups buttermilk
2 cups of your favorite pancake mix or scratch recipe
1 egg
2 tsp canola oil (1 for batter & 1 for griddle)
1/8 tsp spice of your choice
2 cups unpeeled, cubed apple, cooked and drained
Instructions: After soaking oats in buttermilk, add all ingredients (except apples) and mix quickly. Put 1/3 cup batter on oiled griddle. Place 6 or 8 apple chunks on top. Cook till bubbles appear - turn, cook till golden and done. Serve apple side up. Garnish with huckleberry preserves and non-fat sour cream.
