Ingredients: 4 shots of butter spray (PAM) 2 whole wheat English muffins 5 T. granulated sugar 1/2 t. ground cinnamon 3 T. finely chopped pecans 2 large firm peaches 4 T. butter, divided 4 mint sprigs (for garnish) Instructions: 1. Preheat oven to 350 F (175 C). 2. Spray 4 round ovenproof compote dishes with a shot of butter spray. Place all four on a cookie sheet for ease of baking. 3. Split the English muffin in half and place each half in a prepared compote dish, split side up. 4. Combine the sugar, cinnamon, and pecans in a small bowl until the cinnamon and pecans are evenly distributed. 5. Sprinkle a bit of the mixture over each muffin half. 6. Cut the peaches in half around the "seam" and remove the pit. 7. Place each peach half on top of each muffin half, cut side up. 8. Sprinkle the rest of the cinnamon/sugar/pecan mixture evenly over each peach. 9. Place a tablespoon pat of butter on top of each peach half. 10. Bake 25 minutes. 11. Serve warm, garnished with the mint sprig. |
