Cook Time: 55 minPrep Time: 20 min
Yield: 6 servings 

Ingredients:
Shredded Cheddar Cheese, flour, half and half, eggs, frozen crab, shallots, salt, pepper.
To alter the taste of this quiche you can use an array of seasonings that are "egg appropriate."
Old Bay Seasoning, basil, oregano, lemon thyme, cayenne,garlic)

Instructions:
Toss the cheese with the flour. Add the half and half (you can reduce the calories by using skim all the way to whole milk), add beaten eggs, crab,
shallots,seasonings you choose, salt and pepper and mix well.
Pour into pastry shell. We make our pastry shell here At Cumberland Falls but a quality commercially prepared one works nicely too. Bake at 350 Degrees for 55-60 mins. or until set.
* If using deep dish version. Increase all recipe components by 1/2 again and bake at 325 Degrees as it will require longer cooking time and the temperature reduction will allow quiche to set without burning the top.
