Ingredients: 1 1/4 cups all purpose flour 1 cup rolled oats 1/4 cup brown sugar 3 tsp baking powder 1/2 tsp salt 1/4 tsp cinnamon 3/4 cup raisins 1 egg 2 Tbsp mollasses 1/4 cup cooking oil 1 cup milk 1 tsp vanilla Instructions: Method measure all first seven dry ingredients into large bowl and mix together. Make a well in the center. Beat egg in small bowl until frothy, mix in molasses, oil, milk, and vanilla, pour in well. Stir only to moisten. Batter will be lumpy. Fill greased muffin cups 3/4 full. Bake at 400 degrees F for 20-35 minutes. Let stand 5 minutes. Remove from pan. Serve warm. Makes 16 muffins. |
