Cook Time: 1 hrPrep Time: 30 min
Yield: 10 servings

Ingredients:
1/4 cup butter
1/2 cup flour
1 cup cream or milk
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
1/4 teaspoon mustard
1/4 teaspoon nutmeg
6 large eggs
1 (3 oz.) package softened cream cheese
2 cups cottage cheese
1 lb. cubed Monterey Jack cheese

Instructions:
Melt butter, add flour until smooth consistency. Beat cream or milk, baking powder, salt, sugar, dry mustard, nutmeg, eggs and cheeses. Add butter and flour mixture. Stir until well blended. (I use a wet towel over my mixer so mixture doesn't fly out everywhere.) Pour into a 9x13-inch baking dish that has been sprayed with a no stick cooking spray. Bake at 350 degrees for 45 min to 1 hr. Garnish with sliced red pepper.
Optional: You may add salsa or green Tabasco sauce on top.

Notes:
Guest's most requested recipe. Very rich egg dish and great topped with homemade salsa. Good served with a side potato dish, sausage or ham. Return guests will comment, "so glad you made this, it's my favorite". Lots of cook books sell after this dish.
