Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup fresh buttermilk (or cultured buttermilk powder - 2-3 tsps. + 1 cup water)
1 tsp baking soda
1/2 cup canola oil
3/4 cup of natural brown sugar
1 egg or 1/4 cup of "egg beaters" or "scramblers"
1 cup Nabisco 100% Bran
1 cup whole wheat flour
1 tsp molasses (or 1 tsp honey)
"Lots" of your favorites: nuts: almonds, walnuts, pecans, etc., raisins, seeds: pumpkin, sunflower, etc., coconut

Instructions:
Mix oil, brown sugar and egg mix, milk and soda and set aside for a few minutes. Add dry ingredients. Bake at 375 for approximately 20 minutes. Caution - do not over mix or overcook!

Yield: Varies with size of muffin tins. Suggest large oversize muffin tins. (yield 6) utilize paper bake cups.
