Cinnamon Mornings and Chocolate Dreams

Whether you're hosting a formal get-together or need a quick brunch idea, this book will spark your imagination and your appetite.

Ingredients:
1/2 cup milk
1/2 cup flour
3 eggs
1 tsp sugar
1 tsp baking soda
dash salt
2 tart apples (peel and slice)
1/3 cup currants
1/3 cup chopped walnus
5 Tbsp butter
1/2 cup sugar
2 tsp cinnamon

Variation: 2 pears, 1/2 cup cranberries whole, 1 Tbsp Gran Mariner

Instructions:
Mix milk, flour, eggs, sugar, baking soda, and salt 'til batter is smooth. In 10" oven proof skillet or deep dish pie plate, saute apples, currants, and walnuts in 3 Tbsp butter, 1/4 cup sugar, 1 tsp cinnamon. Pour batter over apples to bake in 400 degree oven for 10 minutes. Mix together remaining 1/4 cup sugar and 1 tsp cinnamon. Top panckaes with sugar and cinnamon mixture and dot with 2 Tbsp butter. Return to oven until brown and glazed. (15-20 minutes)
