Cinnamon Mornings and Chocolate Dreams

Cook Time: 20 minPrep Time: 15 min
Yield: 12 servings 

Ingredients:
1/2 C. butter, room temperature
3/4 C. sugar
2 eggs
1/2 C. eggnog
1 T. orange zest (optional)
2 C. all purpose flour
2 1/2 t. baking powder
1/2 t. salt
1/2 t. baking soda
1 t. vanilla
2 C. frozen cranberries

Instructions:
Chop frozen cranberries in food processor until chopped to consistency for muffins, not too fine.
Cream butter and sugar, add eggs, one at a time. Add vanilla and blend.
Sift dry ingredients. Add dry ingredients alternately with eggnog. Stir cranberries into batter, just until blended.
Fill greased muffin tins 3/4 full with batter.
Bake at 375 degrees for 18-20 minutes until lightly brown on top and spring back when touched.
