Ingredients: 3 tbsp pesto 1 cup Parmesan cheese, grated (divided) 1 cup mushrooms, sliced 1/2 cup tomatoes, sliced 3 cloves garlic, minced 2 ½ cups cottage cheese 2 ½ cups fresh spinach 1 cup mozzarella, grated 3-4 tbsp flour 2 cups milk 7 eggs Instructions: Grease 9"x11" pan. Spread pesto and 1/2 cup grated Parmesan cheese over bottom of pan. Saute mushrooms, tomatoes and garlic together. When finished sauteing, mix with cottage cheese and spinach. Then put in pan over pesto. In a separate bowl, mix together mozzarella, Parmesan cheese, flour milk and eggs. Pour mixture in the pan. Bake 50-60 minutes at 350 degrees.
