Ingredients: 3 tablespoons Pesto 1/2 cup Parmesan Cheese, Grated 1 cup Mushrooms, Sliced 1/2 cup Tomatoes, Sliced 3 cloves Garlic, Minced 2 1/2 cups Cottage Cheese 2 1/2 cups Fresh Spinach 1 cup Mozzerella, Grated 1/2 cup Parmesan Cheese, Grated 1/3 cup Flour 2 cups Milk 7 Eggs Instructions: Grease 9"x11" pan. Spread pesto and 1/2 cup grated Parmesan cheese over bottom of pan. Sautee mushrooms, tomatoes and garlic together. When finished sauting, mix with cottage cheese and spinach. Then put in pan over pesto. In a separate bowl, mix together mozzarella, Parmesan cheese, flour milk and eggs. Pour mixture in the pan. Bake 50-60 minutes at 350 degrees.
