Cinnamon Mornings and Chocolate Dreams

Cook Time: 1 hrPrep Time: 1 hr
Yield: 4 servings 

Ingredients:
Lobster, Carrots, Celery, Onion, Leeks, Tomatoes, Cilantro, Cipotle Pepper.
Salt and pepper.
White Wine.
Heavy Cream.
Brandy.


Instructions:
Rinse the lobster well and soak in water. The purpose of this step is to get rid of all of the impurities in the lobster. Take out all innards. Use only the body and the legs of the lobster.
Sprinkle with salt and pepper and olive oil and roast in the oven until slightly caramelized.

In a separate pan, sauté in olive oil diced carrots, celery and onion with salt and pepper until slightly caramelized. Add chopped leeks, tomato, cilantro, chipotle pepper and lobster and cook together. Deglaze the pan with white wine.
Add a lot of heavy cream and reduce. Blend this mixture and strain, put back in pan and reduce to the consistency you like.
Flavor with brandy and salt and pepper.
