Cinnamon Mornings and Chocolate Dreams

Cook Time: 30 minPrep Time: 15 min
Yield: 4 servings 

Ingredients:
1/2 cup flour
1 cup milk
4 eggs (or 6 egg whites, or 1 cup egg substitute)
2 Tbsp. butter, melted
1/2 tsp. salt
4 slices Canadian bacon, diced
5 green onions, diced
1 cup chopped fresh spinach leaves
1-1/2 cups shredded Gruyere cheese

Instructions:
Preheat oven to 350 degrees. Coat a 8" x 8" Pyrex dish with nonstick cooking spray.

Whisk together flour, milk, eggs, butter, and salt. Stir in Canadian bacon and onions. Pour into prepared pan.

Bake 25 minutes, or until eggs are set. Remove from oven and sprinkle with spinach, then top with cheese. Return to oven, and turn off heat. Allow cheese to melt, approximately 5 minutes.

Cut into four portions and serve.
