Cinnamon Mornings and Chocolate Dreams

Cook Time: 20 minPrep Time: 20 min
Yield: 2 dozen 

Ingredients:
2 C. Flour
1 ¼ C. Sugar
2 tsp. Baking soda
2 tsp. Cinnamon
½ tsp. Salt
1 ½ C. finely grated carrot or zucchini
1 ½ C. finely grated apple or ½ C. applesauce
3/4 C. coconut
2/3 C. chopped pitted dates or raisins
3/4 C. pecans or walnuts
3 beaten eggs
1 C. oil
½ tsp. Vanilla


Instructions:
In a mixing bowl combine flour, sugar, soda, cinnamon and salt. In another bowl combine carrot, apple, coconut, dates and pecans. Stir in beaten eggs, oil and vanilla. Add to dry ingredients stirring until moistened. Grease muffin pans and spread batter into tins.
Bake 375 degrees for 18-20 minutes. Makes about 24 muffins.
