Ingredients: • 12 oz Post Selects Banana Nut Crunch Cereal • 1 C walnuts • 3 C sugar • 3 C white flour • 2 C bran • 5 t. baking soda • 2 t. salt • 1 t. cinnamon • 2 mashed up ripe bananas • 1 C oil • 4 beaten eggs • 1 quart buttermilk Instructions: Mix dry ingredients in a very large mixing bowl. Then add oil, eggs, and buttermilk. Blend just until dry ingredients are well mixed. Then mix in bananas. Can be stored for 7-10 days in a covered container in the fridge. Use only what you need to make 2 to 24 muffins. Bake 25 minutes at 400 F for jumbo size muffins; 15 minutes for regular muffins |
