Ingredients: 1½ - 2 Loaves French Bread 2 - 4 Ripe Bananas 16 oz Cream Cheeses (Softened) ¼ Cup dark rum 2½ cup whipping cream or heavy cream, split 10 lg eggs-beaten ¼ tsp Nutmeg 1 tsp vanilla 1 cup Pecan pieces (chopped) Caramel Syrup 1 stick butter 1¾ cup light brown sugar Pinch of salt 1 cup heavy cream Instructions: Spray 2 - 9 x 13 baking dishes. Slice bread ½ thick. Layer bottom of each dish with French bread (tightly). Fill in empty spaces with cut sections of bread. Banana Filling: Puree Cream Cheese in food processor, add bananas and rum, puree again. Add 1½ C whipping cream while blending. Split the filling over the 2 pans of bread. Egg Mixture: Beat eggs, 1 cup whipping cream, vanilla, and nutmeg.. Place another layer of bread; then pour egg mixture over second layer of bread. Sprinkle with pecans pieces, cinnamon and brown sugar. Refrigerate overnight. Bake at 350 for 25-35 minutes or until set and brown. Top with sliced bananas, caramel syrup, and dust with powdered sugar. Caramel Syrup Combine all ingredients in sauce pan and bring to rolling boil; stirring constantly. About 1½ to 2 minutes until thickened. Notes: We cut this into triangle shaped pieces and serve. Guests love it! |
