Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup quick cooking grits
1 teaspoon salt
4 cups water
1 8 once package frozen chopped spinach (thawed with water squeezed out)
1 cup chopped red pepper
1 medium onion, chopped
6 whole eggs
1/2 cup heavy whipping cream
1-1/2 cups shredded cheddar cheese
salt and pepper to taste


Instructions:
Preheat oven to 350 degrees. In a sauce pan, boil water. Add salt and grits, stirring constantly until thickened. Remove from heat and pour into greased baking dish. Sautee pepers and onion until soft and transparent and layer on top of grits. Layer chopped, squeezed spinach on top of pepper and onion mixture. Mix together eggs and whipping cream and pour on top of spinach. Sprinkle with shredded cheese and bake until firm, about 45-50 minutes.

Serves 6.
