Cinnamon Mornings and Chocolate Dreams

Yield: 8 servings 

Ingredients:
2 tablespoons olive oil
2 bunches green onions, sliced
1 pound fresh spinach leaves (baby spinach works best)
1/2 pound mushrooms, sliced
1/4 cup minced fresh basil, or 1 tablespoon dried
12 eggs
1 cup milk
1 1/2 cups Italian cheese blend, or a mix of swiss, parmesan and/or sharp cheddar works well
salt and pepper to taste


Instructions:
Preheat oven to 350 degrees. In a large skillet, saute the onions, mushrooms and spinach in olive oil until all spinach is wilted (approximately 5 minutes). Remove from heat and stir in basil.

In a large bowl, whisk together eggs and milk until well blended, and stir in cheese, spinach-mushroom mixture and salt and pepper. Pour into a greased 9x13-inch baking dish and bake for 35-40 minutes or until set and lightly golden. Let stand for five minutes before serving.
