Cinnamon Mornings and Chocolate Dreams

Ingredients:
˝ cup fresh cilantro, chives or diced red bell pepper
10 eggs
6-8 potatoes—red, yellow, white or purple
1 can cream of mushroom soup
Green chilies to taste
2 cups grated sharp cheddar cheese

Instructions:
Dice peeled potatoes into bite-sized pieces; mix with mushroom soup and green chilies. Season with salt and pepper. Microwave approximately 6-7 minutes in serving dish. While potatoes are cooking, scramble eggs with salt and pepper. Pour over potatoes; mix well and sprinkle with cheese and bake at 350° until cheese is melted. Sprinkle with garnish and serve.

Notes:
We grow a variety of potatoes at Blue Lake Ranch, and the purple Peruvian potatoes which are very purple are always a fun surprise. Because we are in Southwestern Colorado, green chilies are a must!
