Cinnamon Mornings and Chocolate Dreams

Ingredients: 1 cup (2 sticks) butter, softened 1 cup firmly packed brown sugar 1/2 cup granulated sugar 2 eggs 1 tsp vanilla extract 1 1/2 cup all-purpose flour 1 tsp baking soda 4-5 T cinnamon dash of nutmeg (optional) 1/2 cup golden raisins 1/2 cup dried cranberries 1 cup flaked coconut 1 cup chopped pecans (macadamia or walnuts) 1 cup chocolate chips 3 cups uncooked quick oats Instructions: Beat together butter and sugars until creamy. Add eggs and vanilla and beat well. In separate bowl combine all dry ingredients, EXCEPT OATMEAL, and toss them together with wooden spoon so the fruits, nuts and coconut are not all clustered together. Add all dry ingredients and oatmeal to creamed mixture and stir until mixture is blended. DO NOT OVER MIX. Drop by rounded Tablespoon onto UNGREASED cookie sheets. Bake 10-15 minutes or until lightly browned on the bottoms. Cool one minute on cookie sheet and then remove to wire cooling rack. Notes: MISSION INN COOKBOOK in 2009.
