Ingredients: 3 Eggs 1 Cup Sugar 1/4 cup canola oil 2/3 Can Pumpkin 1 tsp Lemon Juice 3/4 Cup Flour 1 tsp baking powder 1 tsp ginger 1/4 tsp nutmeg 1 tsp cinnamon 1 8oz cream cheese 1/4 cup butter 1 cup powdered sugar 1/2 tsp vanilla Instructions: Mix together eggs, oil, and sugar. Add pumpkin, lemon juice, and dry ingredients. Combine. Pour into a well sprayed jelly roll pan spreading evenly. Bake 12-15 minutes at 375. Mix remaining ingredients together. When First batch is out of the oven, immediately flip onto a sheet of plastic wrap. Roll instantly. Refrigerate. When it has cooled (about 1-2 hours later) unroll and spread cream cheese frosting evenly. Re-roll. I recommend freezing and taking out 2 hours before service for even perfect slicing! Garnish with powdered sugar and walnuts! |
