Cinnamon Mornings and Chocolate Dreams

Cook Time: 25 minPrep Time: 10 min
Yield: 6 servings 

Ingredients:
3 large eggs
¼ cup soy milk
1/8 tsp ground nutmeg
½ cup orange juice
2 Tbsp granulated sugar
½ tsp vanilla
6 one inch slices of French Bread
2 Tbsp butter
½ cup chopped pecans



Instructions:
Beat the eggs, milk, nutmeg, orange juice, sugar and vanilla with a wire whisk. Place bread slices into a 13x9 pan. Pour the egg mixture over bread and cover with foil. Refrigerate overnight. All the egg mixture will be absorbed.

Next Day - Melt butter on a jelly roll pan. Place soaked bread slices without sides touching on the buttered pan. Sprinkle with pecans. Bake in a preheated 375 degree oven for 25 minutes until golden brown. Serve with maple syrups.



Notes:
Variation: Chopped macadamia nuts and serve with cream of coconut
