Cinnamon Mornings and Chocolate Dreams

Ingredients: 1/3 c. butter 1/3 c. flour 4 c. chicken broth 2 c. half and half 8 slices bacon 1 tsp. ham base or ham flavoring* dash nutmeg 1 large or 2 medium tomatoes, peeled and diced 1 c. chopped iceberg lettuce Instructions: Melt butter in top half of double boiler. Add flour and stir for one minute while it bubbles. Add chicken broth and mix well. Leave over direct heat, stirring constantly until it thickens. Put top half of double boiler over bottom (which has sufficient water in it) and add half and half. Add ham base, nutmeg and tomatoes. Taste and add salt if necessary. Cover and simmer for 30 minutes. Cook bacon and crumble. Just before serving, add chopped lettuce and crumbled bacon. *Ham base or ham flavoring can usually be found in the soup section of your grocery store. If you can't find it, add a little extra bacon, and substitute a little bacon drippings for some of the butter in the first step. Ham base is very salty, so taste before seasoning. |
