Cinnamon Mornings and Chocolate Dreams

Yield: 1 servings 

Ingredients:
2 tbsp. oil (25 ml)
1 med. chopped onion
1 cup (125 ml) chopped red pepper
1/4 lb (125 gr) mushrooms, thinly sliced
1 300 gr package of frozen spinach, thawed
2 med. cooked potatoes, sliced or diced
salt and pepper to taste
1/2 tsp ground nutmeg (optional)
5 eggs, beaten
1 cup (500 ml) small curd cottage cheese
1 cup (500 ml) shredded old cheddar cheese, or a blend of cheeses to taste


Instructions:
- Preheat oven to 350 degree F (180 degrees C)
- Heat oil in large pan and saute onions, red peppers and mushrooms until onions are soft
- Cook spinach according to package instructions, and drain well
- mix all together, add potatoes, and add salt and pepper to taste
- in large bowl beat eggs, and add cottage cheese and other cheeses
- add vegetable mix to egg/cheese mix and combine well
- spray 9 inch (24 cm) glass pie plate with cooking spray and pour mixture into it
- bake for approx. 35-45 minutes until centre of frittata is set/firm
- loosen sides and turn over onto pan lid, and then onto serving plate

Pre-cooked bacon or slices ham can also be added if desired
