Cinnamon Mornings and Chocolate Dreams

 Prep Time: 15 min
Yield: 4 servings 

Ingredients:
This dish is typically served for breakfast with
Irish sausage and bacon (known as Rashers) fried
egg and grilled tomato, particularly in the north
of Ireland.

I usually make extra when I make mashed potatoes
so that I have enough to make potato cakes the
next day.

2 cups mashed potatoes
1 cup all purpose flour
2 tbs. butter
Salt to taste.


Instructions:
Melt the butter and mix into the potatoes. Add salt
and flour and mix quickly together. Knead the
mixture lightly and roll out into the size of a
large dinner plate. Cut into 4 quarters. Spray the
frying pan with some Pam and cook potato cakes for
about 3 minutes on each side, until nicely browned.

Notes:
I like to spread them with butter while they are
hot. Delicious!! Great with grilled mushrooms,
grilled tomatoes, pork sausage and bacon.
