Cinnamon Mornings and Chocolate Dreams

Cook Time: 10 minPrep Time: 5 min
Yield: 2 servings 

Ingredients:
2tbsp All-purpose flour, seasoned with salt and freshly ground black pepper
¾ - 1 lb Salmon fillet, about ½ to ¾ inch thick, skinned and cut into 6 to 8 oz portions
1 tbsp Butter
½ cup Freshly squeezed orange juice
¼ cup Chardonnay
½ tsp Chopped fresh rosemary
1 tbsp Minced shallots
1 tbsp Maple Syrup


Instructions:
In a shallow bowl, combine flour, salt and pepper. Dredge salmon fillet in flour mixture, brush off excess flour and set aside.

In a skillet, melt butter over medium heat. Add salmon and sauté for 1 – 2 minutes per side.

Add orange juice. Chardonnay, rosemary, and shallots, and boil until is reduced by half, about 3 minutes.

Stir in maple syrup. Serve salmon topped with sauce.


Notes:
This dish can be well complimented with fresh asparagus, steamed and lightly sauteed in olive oil, with garlic and freshly ground black pepper. Just add a side of rice or baked potato, pour a glass of the chardonnay, and you'll be in culinary heaven!
