Ingredients: 2 large ripe tomatoes chopped 1 large red bell pepper 1 onion, sliced 1 lb green beans blanched* 3-4 tablespoons olive oil salt and pepper 1 tablespoon fresh parsley 1/2 teaspoon dried oregano Instructions: Saute the onion and pepper in olive oil. Add tomatoes and herbs. Simmer 5 minutes. Add blanched green beans and simmer 5 to 10 minutes more. Notes: To blanch green beans add them to boiling water. When they are tender yet still have some bite remove them and plunge them into iced water to stop the cooking. |
