Ingredients: 4 cup flour 2/3 cup sugar 2 tablespoons baking powder 12 teaspoons butter--cold 1 cup chopped walnuts 1 cup diced, dried apricots (hint: if too sticky; put in freezer for awhile—they’ll be easier to dice) 1 cup white chocolate chips 2 eggs 1 cup heavy whipping cream (don’t substitute 1/2 & 1/2 or milk—they won’t turn out!) 2 teaspoon vanilla Instructions: Put the first 4 ingredients in food processor; process until it looks crumbly. If you don’t have food processor, cut butter into dry stuff in with 2 knives. Pour into bowl. Gently mix in next 3 ingredients. In a separate bowl, combine the last 3 ingredients, then pour the liquid into the dry stuff. Mix & form a huge gloppy ball; knead in all flour. You can form the scones in 2 ways: Pat about 3/4 -1" thick. Cut into triangular wedges & place on cookie sheet. Brush tops with a little heavy cream. Bake @ 350 degrees F; about 18-20 minutes. |
