Ingredients: Small brown, red or white baby potatoes Steak spice or Mrs. Dash (Montreal steak spice preferred) Instructions: Take an apple corer with a handle and insert in one end of potato and twist. Take a small knife and cut on the cylinder at the top all around and remove “donut” (use for another purpose). What is left will look like a stem atop a mushroom cap. Cook in salted water-- cover for 15 minutes until just tender (do not overcook). Drain and refrigerate overnight to firm up. Must be cold. In a wide frying pan, melt butter just enough to cover the bottom (1-2 teaspoons). Add potatoes. Heat over medium until hot. Sprinkle with steak spice or Mrs. Dash. Shake pan to turn and brown. Do not overcook. Serve with dinner or breakfast. |
