Cinnamon Mornings and Chocolate Dreams

Ingredients:
Eggs -- 2 per guest and 1 or 2 more
1-2T. approx.Green onions
1-2 T. approx. Green bell pepper (or red or orange)
1/4 c whole milk (2% is okay but skim isn't)
1tsp. (approx) crumbled Feta cheese
1/4-1/2 c shredded cheddar cheese
s/p/Mrs. Dash for seasonings


Instructions:
Chop the green onion and bell pepper; add to hot skillet with 1 T. butter, marg. or oil. Cook approx 1-2 minutes. If you need to wait before cooking the eggs, this is the place to stop.
Whisk eggs and milk.
Turn the heat back on under the skillet and add the eggs/milk mixture. S/P/Mrs. Dash and feta cheese are added now as the eggs cook. Use a rubber scraper to gently lift the eggs and allow the mixture to flow onto the pan bottom. When the eggs are almost ready, toss in the shredded cheddar and cook about 30 sec. more. Turn out into a nice dish, add more cheddar on top and a dusting of paprika for color.

Notes:
Don't tell the kids about the feta and they'll experience a new flavor!
