Cinnamon Mornings and Chocolate Dreams

Cook Time: 30 min 
Yield: 10 cups 

Ingredients:
Nonstick vegetable oil spray
4 cups old-fashioned oats
1 cup sliced almonds or chopped pecans
1/2 cups (packed) brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/3 cup canola or safflower oil
1/3 cup honey
1 1/2 tablespoons sugar
1 1/2 tablespoons vanilla extract
1 cup dried cranberries
1 cup golden raisins


Instructions:
Preheat oven to 300 degrees. Place oven rack in
center position. Lightly spray baking sheet with
nonstick oil.
Mix together in large bowl oats, nuts, brown
sugar, cinnamon, salt and fruit and set aside.
Combine oil, honey and sugar in small saucepan and
simmer over low heat until sugar has melted.
Remove from heat, stir in vanilla. Pour liquid
over dry mixture. Mix thoroughly. Spread out
evenly onto baking sheet. Bake 30 minutes,
stirring occasionally until golden brown. Cool
completely before breaking up into chunks and
place into airtight container. Can be stored for 3
weeks.
