Ingredients: 2 1/2 C. flour 1/2 C. sugar 1 T. baking powder 1/2 t. salt 1 C. canned crushed pineapple 1/4 C. coconut 1 egg 1 C. milk 1/4 C. melted butter or canola oil Instructions: Preheat oven to 375 degrees. Sift together the flour, sugar, baking powder, and salt. Add pineapple and coconut and mix very well. Mix the egg, milk, and melted butter to the dry ingredients. Separate evenly in muffin pan. Sprinkle tops with sugar Cook in foil cupcake liners in muffin pan for 25-30 minutes until lightly golden brown. |
