Cinnamon Mornings and Chocolate Dreams

Yield: 6 servings 

Ingredients:
1 cup flour (all purpose or 1/2 cup all purpose and 1/2 cup whole wheat pastry)
1/3 cup cornmeal
1 tsp baking powder
pinch of salt
1 egg
1/4 cup vegetable oil
1/4 cup maple syrup
1/2 cup milk

Instructions:
Preheat oven to 400 degrees. In a medium bowl, stir together the flour, cornmeal, baking powder, and salt. With a fork, make a well in the middle of the flour mixture. Beat the egg in a measuring cup and pour it into the well. Add the oil, syrup, and milk to the well. Stir the wet ingredients into the dry ingredients until they are just blended. Do not overmix. Use a 1/4 cup measure to divide the batter equally among 6 muffin cups that have been coated with cooking spray. Bake at 400 degrees for 20 minutes.
