Cinnamon Mornings and Chocolate Dreams

Yield: 14 servings 

Ingredients:
2 2 ½ lb. roasting chickens
2 tablespoons compound butter
3 tablespoons olive oil
1 tablespoon ground black pepper
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh sage



Instructions:
Preheat outside grill (gas or wood) to 400 degrees F.

Take two 12 oz. cans of your favorite beer. Pour out one quarter beer in each can add one tablespoon of your favorite spice (Cajun, lemon-pepper, curry, etc.) to each can.

Place 2 tablespoons compound butter under skin of chicken breast and rub the remaining spices (or substitute with your favorite spices) on outside of chicken.

Place entire beer can into cavity of chicken. Place each chicken upright on a cookie sheet and place directly on grill of BBQ or smoker. Shut lid and smoke/bake for approximately one hour, or until 180 degrees internal temperature, and juices run clear which thigh is pierced with a fork. Remove and let rest for 15 minutes. Carve into 8 pieces.

Serve with your favorite sides and condiments like jalapeno jelly.
