Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 pounds Jimmy Dean Hot Breakfast Sausage
1 cup chopped onions
1 cup chopped peppers

1 4 oz can mushrooms

1 package O'Brian Potatoes (frozen) Orida brand

1 1/2 cups grated sharp cheddar cheese


Instructions:
Cook sausage in heavy large skillet over medium-high heat until brown, breaking into small pieces with back of spoon, about 5 minutes. Mix in onions peppers and potatoes and cook about 5 more minutes until potatoes are soft. Mix in mushrooms. Spray small baking bowls with PAM. Pour about ½ cup of mixture into baking bowls. Sprinkle cheddar cheese over sausage mixture in each baking bowl. Prepare up to 48 hours ahead and refrigerate. Mix can be prepared up to 2 weeks ahead and frozen without the cheddar cheese.

1 ½ eggs for each baking bowl 2 cup cottage cheese 1 cup grated Parmesan cheese 1/2 cup sour cream Mix eggs and other ingredients together. Pour ½ cup plus into each baking bowl.
Preheat oven to 350°F. Bake for 30 to 35 minutes until tops start to brown slightly. Sprinkle with paprika and serve hot.

Serves 10 to 14.
