Cinnamon Mornings and Chocolate Dreams

Ingredients:
2 Chickens (2.5 - 3 lbs. each)
Salt, pepper, and thyme
½ cup Oil
¼ cup Shallots, or onions, small dice
2 oz. Garlic
¾ lbs. Mushrooms, slice thin
6 oz. White wine
4 oz. Brandy
1 pint Tomatoes, peeled, deseeded, and cubed
1 can Chicken Broth
½ cup Parsley, chopped



Instructions:
Clean and disjoint chicken. Season with salt, pepper and thyme.

Heat oil in large saute pan. Add chicken pieces and brown carefully on all sides.

To prepare the sauce, remove all but two ounces of the saute oil, add shallots, garlic, mushrooms and wine. Flambe with brandy and simmer until tender.

Add tomatoes and chicken broth. Check seasoning. Cover and reduce to a simmer. Add chicken and cook 30 minutes or until tender.

Sprinkle chopped parsley over individual servings.
