Cinnamon Mornings and Chocolate Dreams

Yield: 3 dozenInactive Prep Time: 30 min

Ingredients:
2 tablespoons melted butter
½ cup water
1 cup corn syrup
2 cups sugar
1 tablespoon butter
1 cup peanuts
1 tablespoon vanilla extract
2 teaspoons baking soda
½ teaspoon salt


Instructions:
Line a large baking sheet with aluminum foil, brush it with the melted butter, and set aside for later use. Combine the water, corn syrup, and sugar in a saucepan. Cook over medium heat, stirring constantly until the mixture is a golden color (285oF on a candy thermometer). Stir in the butter and peanuts and continue to stir and cook for another two minutes (300oF on a candy thermometer). Remove the mixture from the heat and quickly stir in the vanilla and baking soda. Spread the mixture as thin as possible onto the lined baking sheet and then cool. After the candy has cooled completely, invert the baking sheet and peel the foil from the sheet and from the candy. Break the candy into pieces and store in a tightly covered container.
