Cinnamon Mornings and Chocolate Dreams

Yield: 4 servings 

Ingredients:
•Pie crust homemade or store bought.
•4-5 medium tomatoes, halved and seeded.
•4 oz. brie, chopped or shredded.
•2 oz. fresh mozzarella, cut into small cubes.
•½ C grated jack cheese, or other light cheese.
•1/3 C chopped fresh basil, or a 1 T dried.
•4-5 eggs.
•1/3 C milk.
•1/3 C half and half.

Instructions:
Preheat to 350. Bake crust for 5-7 minutes. Meanwhile, drain tomatoes on paper towels. Beat eggs, cream and milk in a bowl, add salt and pepper. Place brie and mozzarella in bottom of warm pie crust, add tomatoes, then basil, then jack cheese and then pour in egg mixture. Bake 35 minutes, or so until pie is set in the middle. Let cool slightly before slicing and garnish with a fresh basil leaf.
